FERMENTED FOODS: A STEP TOWARDS ATTAINING SUSTAINABILITY THROUGH FOOD

Abstract

Microbes are the microscopic organisms that are omnipresent. While they play significant role in various life processes, this study targets on their importance in fermentation and how intricately it supports the achievement of global goals. Fermentation literary means “for life” and its origin dates back to much before the discovery of bacteria especially as dairy products and beverages. Food products such as wine, beer, pickles, cheese, soy are a few examples that have been used ever since the origin of human kind. In recent years, public awareness has given probiotics much attention. While probiotics are defined as “live microorganisms that when taken in sufficient amounts can provide health benefits”; prebiotics includes substrates that are selectively utilized by microbial hosts; and synbiotics as a blend of both the above. Several case studies and metagenomics analyses in the last few decades have provided a plethora of evidences in support of the health benefits associated with fermented foods.

While there are documented reports of antioxidant properties in fermented foods and beverages with a potential of fighting free radicals that cause oxidative damage, there are many others including their ability to improve protein digestibility, anti- diabetic properties, curing obesity, cardiovascular diseases etc. Prebiotics, which are the non-digestible food ingredients are generally produced when lactose, sucrose, plants and starch are utilized as raw materials. Many studies have reported them to promote bone strength, immunity, and even ensure mental and gut health. In light of the global goals laid by United Nations, one can strongly establish the importance of microbes in fulfilling Sustainable Development Goals (SDGs) through their marked role in fermentation and the food products based on it. This study primarily focuses on highlighting this crucial aspect of microbes and global goals.
